Ingredients
- 2 tbsp butter
- 1 onion, peeled and chopped
- 3 ripe tomatoes, peeled and chopped
- 3 tbsp tomato paste
- 2 tbsp unbleached flour
- 2 cups chicken broth
- salt and pepper
- 1 cup milk or half and half
Directions

Melt butter in saucepan and add onion. Saute for 3 minutes. Stir in tomatoes and tomato paste. Cook for 3 minutes, stirring well.

Gradually add flour and mix well with a wooden spoon. Slowly add the broth, salt and pepper, stirring constantly.

Simmer 15 minutes.

Remove from heat and pour mixture into blender. Blend at high speed for 1 minute. Return to saucepan and add the milk. Heat through and simmer for another 2 minutes.
