Fresh Tomato Soup

Ingredients

  • 2 tbsp butter
  • 1 onion, peeled and chopped
  • 3 ripe tomatoes, peeled and chopped
  • 3 tbsp tomato paste
  • 2 tbsp unbleached flour
  • 2 cups chicken broth
  • salt and pepper
  • 1 cup milk or half and half

Directions

  1. Melt butter in saucepan and add onion. Saute for 3 minutes. Stir in tomatoes and tomato paste. Cook for 3 minutes, stirring well.

  2. Gradually add flour and mix well with a wooden spoon. Slowly add the broth, salt and pepper, stirring constantly.

  3. Simmer 15 minutes.

  4. Remove from heat and pour mixture into blender. Blend at high speed for 1 minute. Return to saucepan and add the milk. Heat through and simmer for another 2 minutes.
