Sausage, Kale and Sweet Potato Soup

Ingredients

  • 1 tbsp oil
  • 1 lb Italian sausage links
  • 1 onion
  • 1/2 t garlic powder
  • 1/4 tsp pepper
  • 6 cup water
  • 4 tsp chicken bouillion granules
  • 2 lbs sweet potatoes, peeled, quartered and cut into 1/4 inch slices
  • 1 lb kale, trimmed of stems and torn into 3 inch pieces
  • 1/2 c rolled oats

Directions

  1. In large pot heat oil

  2. Cook sausage links 8-10 minutes

  3. Take out of pot an d cut into 1/4" thick slices

  4. Add onion to drippings in pot, cook 3 minutes

  5. Return sausage to pot with garlic and pepper

  6. Cook, stirring 1 minute

  7. Stir in 6 cup water and chicken bouillon garnules

  8. Add sweet potatoes

  9. Cover, bring to simmer over med low heat Cook, stirring occasionally until potatoes are tender

  10. Stir in kale and oatmeal and simmer another 10 minutes or put all in crockpot and cook on low
