Ingredients
- 1⁄2 cup flour
- 1 tsp salt, divided
- 1⁄2 tsp black pepper, divided
- 1 (3-lb) chicken, cut into pieces
- 2 Tbsp olive oil
- 1 chopped onion
- 2 tsp chopped garlic
- 1 (14-oz) can diced tomatoes
- 2 small cans mushrooms, drained
- 1 tsp dried oregano
- Hot cooked linguine
Directions

Combine flour, 1⁄2 tsp salt, and 1⁄4 tsp pepper. Coat chicken with flour mixture.

In a large skillet, heat oil for 30 seconds. Add chicken and brown on all sides. Remove chicken to a large bowl.

In same skillet, sauté onion and garlic for 3 minutes. Add tomatoes, mushrooms, 1⁄2 tsp salt, 1⁄4 tsp pepper, and oregano. Bring to a boil. Add chicken. Cover; simmer for 25 minutes or until done. Serve with linguine.
