Ingredients
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar or red wine vinegar
- 1.5 tsp Dijon mustard
- 2 garlic cloves, minced
- 2 cups cooked brown rice
- 1 large tomato, seeded, diced
- 1/2 red onion, diced
- 1/2 cup sliced pitted black olives (Kalamata)
- 1/2 cup sliced green olives
- 1/4 cup drained capers
- 1/4 cup pine nuts, toasted
Directions

Whisk oil, vinegar, mustard and garlic in a small bowl. Combine remaining ingredients in medium bowl. Pour dressing over and toss to blend. Season with salt and pepper.
