Rice, Olive and Caper Salad

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar or red wine vinegar
  • 1.5 tsp Dijon mustard
  • 2 garlic cloves, minced
  • 2 cups cooked brown rice
  • 1 large tomato, seeded, diced
  • 1/2 red onion, diced
  • 1/2 cup sliced pitted black olives (Kalamata)
  • 1/2 cup sliced green olives
  • 1/4 cup drained capers
  • 1/4 cup pine nuts, toasted

Directions

  1. Whisk oil, vinegar, mustard and garlic in a small bowl. Combine remaining ingredients in medium bowl. Pour dressing over and toss to blend. Season with salt and pepper.
