Potato Leek Soup with Kale and Turkey Sausage

Serves 2 people
Ingredients
- 1 small leeks cut in half legthwise and sliced
- 1/4 Cup baby carrots chopped
- 1 red potatoes chopped
- 1 Cups chopped fresh kale
- 1 cloves garlic chopped
- 1 Tbsp Olive Oil
- 1/4 Tbsp fresh thyme, or 1 tsp dry
- 1 Bay leaves
- 3 Cups low sodium vegetable or chicken broth.
- 3 oz Smoked Turkey Sausage sliced
Directions

Chop the leeks and and kale, saute them in olive oil over med/hi heat for a few minutes while you are chopping the carrots and potatoes. Add carrots, potatoes, thyme and garlic, saute for about 5 minutes. Add the bay leaves, broth and sausage bring to a boil, then reduce to simmer for 30 minutes. Serve with crusty bread for an easy lunch or light dinner. I like to make a lot of soup, you can easily cut the recipe in half to make less.
