Ingredients
- 12 oz. chicken
- 1 Tbsp. canola oil
- 1 can Diced Tomatoes
- 1 can Corn
- 1 can Carrots
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 1 cup Chicken Broth
- 1-1/2 cups instant rice
Directions

Cut up chicken and cook with a little salt, pepper and garlic powder, or use precooked leftover chicken.

Stir in undrained tomatoes, corn, carrots, chili powder, cumin and broth. Make sure your pot or pan is big enough for all this!

Bring to a boil and stir in rice.

Cover and simmer 5 minutes.
