Pink Lady Cake

Lovely moist cake

Serves 12 people

Ingredients

  • 125 grams butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 cup coconut
  • 1/2 tsp red food colouring

Directions

  1. Cream butter and sugar until light and fluffy.

  2. Beat in eggs singly.

  3. Add sifted flour and baking powder, along with remaining ingredients, until just combined and smooth.

  4. Bake in paper lined 20cm cake tin at 180oC approx 30-45 minutes, until firm to touch and cake skewer comes out clean.

  5. When cold, ice with butter icing, coloured with small amount of red food colouring.
