Ingredients
- 3 Lg tomatoes; peeled and sliced
- 1 teaspoon of salt
- 1/2 pkg refrigerated pie crusts
- 4 bacon slices
- 3 medium sweet onions; halved and thinly sliced
- 1 cup shredded sharp cheese
- 1 cup mayonnaise
- 1/4 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- 2 Tablespoons fine dry breadcrumbs
Directions

Place tomatoes on papertowels and sprinkle with 1/2 t salt. Let stand 30 minutes.

Unfold pie crust and fit into 9" pie pan. Fold edges under and line with foil or weights.

Bake at 425F for 10-12 min. Remove foil or weights.

Cook bacon until crisp and drain on paper towel.

Saute onions in 1 teaspoon bacon grease, medium heat 8-10 minutes.

Crumble bacon and set aside.

Spoon onions over pie crust and top with tomato slices.

Stir together cheddar cheese, mayonnaise, pepper and remaining 1/2 t. salt. Spread mixture over tomatoes.

Combine Parmesan cheese and bread crumbs and sprinkle over top.

Bake 350F 30 minutes or until firm.

Sprinkle bacon on top.
