Mixed Greens with Fennel, Pears and Parmesan

Ingredients

  • 3 bunches watercress
  • 3 cups coarsely torn salad greens
  • 1 small head radicchio, separated
  • 1 cup sliced fennel
  • 3 tbsp pine nuts, toasted
  • 2 pears, peeled, cored and thinly sliced
  • 1 cup shaved Parmesan cheese

Directions

  1. Toss the watercress, salad greens, radicchio, and fennel together in a large salad bowl.

  2. Scatter the pine nuts, pears and Parmesan over the greens.

  3. Toss the salad with vinaigrette.
