Zucchini Nachos

Ingredients

  • 1 med zucchini, slices
  • 1/8 tsp onion powder
  • 1/8 tsp basil leaves, crushed
  • 2 oz. (1/2 c.) shredded mozz cheese
  • 1/2 c. coarsely chopped pepperoni
  • 1-2 tsp grated Parm cheese

Directions

  1. MICRO: On med micro-safe plate, arrange zucchini slices

  2. Sprinkle w/ onion powder and basil.

  3. Top w/ mozz cheese, pepperoni and Parm.

  4. Micro on high for 1 -2 mins until cheese is melted.

  5. EN: Heat oven to 350.

  6. Prepare nachos as directed above using a 9 inch pie pan.

  7. Bake for 5-10 mins.
