Ingredients
- 1 1/2 c. whole-milk yogurt, well stirred
- 2/3 c. EVOO
- Juice of 1 lemon
- 1 c. sugar
- 3 lrg eggs
- 1 1/2 tsp vanilla
- 4 sm tart apples (1 1/2 lbs)
- 2.5 c. flour
- 2.5 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- Pinch nutmeg
- 2.5 tsp cinnamon (divided)
- 1/2 c. packed br sugar
- 2 tbsp unsalted butter, room temp

Heat oven to 350

Lightly grease 13×9 pan with baking spray or olive oil.

In large bowl, whisk together yogurt, EVOO, lemon juice, sugar, eggs and vanilla.

el and core the apples, and chop into chunks about 1/2 inch across. SHould have 3.5 – 4 cups. Stir into liquid ingredients.

Add flour, baking powder, baking soda, salt, nutmeg and 1/2 tsp cinnamon and stir just until no lumps remain.

In a small bowl, mix remaining 2 tsp cinnamon w/ the brown sugar and butter.

Pour half the batter into prepared pan.

Sprinkle batter with half the cinnamon-brown sugar mix, dropping it on the batter in small lumps. Spread remaining batter over the top and sprinkle w/ remaning cinnamon-brown sugar.

Bake in preheated oven 45-55 mins, covering w/ foil at the end of the top is browning.

When a tester comes out clean, transfer cake to a cooling rack and let it cool at least 15 mins.
