Ingredients
- 4-5 bunches parsley (no stems), rinsed well, chop in food processor
- 2 bunches scallions – white parts, rinse well, chop
- 2 large bunches fresh mint (no stems), rinse well, chop
- 12-15 Roma tomatoes, chopped finely
- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1 cup (already soaked in water) cracked wheat (bulghur wheat – grade 1).
Directions

Mix ingredients in bowl. Add 1 tbsp salt. Mix again. Add olive oil and lemon juice (can use ¾ to full cup). Mix together.
