Light Fruit Cake

Lovely Christmas or Wedding Cake, moist and keeps well

Ingredients

  • 1 kg mixed dried fruit
  • 1/2 cup water
  • 250 grams butter
  • 3/4 cup sugar
  • 1 T golden syrup
  • 3 eggs
  • 1/2 t each vanilla, lemon, almond essence
  • 1 1/2 cups flour
  • 1 t baking powder
  • 2 t mixed spice

Directions

  1. Simmer fruit in water until nearly evaporated

  2. Cream butter, sugar, syrup and eggs

  3. Stir in essences

  4. Add sifted dry ingredients

  5. Lastly, mix in fruit

  6. Bake in well lined 20cm cake tin at 160oC approximately 1 1/2 hours

  7. Cool, wrap in foil and store in air tight cake tin to keep
