Protein Bowl

Ingredients
- 2 cups brown rice
- 2 tablespoons fresh cilantro
- 1/2 cup sweet or red onion
- 1/2 sweet potato
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sliced organic almonds
- 1/2 tablespoon organic sunflower seeds
- 1/4 avocado
- 1 cup sliced cherry tomatoes
Directions

Cook brown rice as per directions.

Finely chop cilantro and finely dice onion.

Scrub sweet potato, thinly slice and place on cookie sheet and spray with cooking spray, sprinkle with seas slat and black pepper.

Put in the oven for 350 for 10 minutes on each side.

Combine all ingredients and enjoy!
