Soba Noodle Salad with Peanut Sauce

Ingredients
- 2 oz. Soba noodles
- 1/2 cup shredded cabbage
- 1/4 cup carrot, shredded
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 teaspoon agave
- 2 oz. tofu, prebaked
Directions

Prepare soba noodles according to package directions.

Shred carrot using a vegetable peeler.

While the soba noodles boil, prepare the sauce.

In a ramekin dish, mix together the peanut butter, soy sauce, and agave with a fork.

Adjust measurements to taste.

Combine the noodles, cabbage, carrot, and tofu in a bowl. Pour sauce over and enjoy!
