Soba Noodle Salad with Peanut Sauce

Ingredients

  • 2 oz. Soba noodles
  • 1/2 cup shredded cabbage
  • 1/4 cup carrot, shredded
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon agave
  • 2 oz. tofu, prebaked

Directions

  1. Prepare soba noodles according to package directions.

  2. Shred carrot using a vegetable peeler.

  3. While the soba noodles boil, prepare the sauce.

  4. In a ramekin dish, mix together the peanut butter, soy sauce, and agave with a fork.

  5. Adjust measurements to taste.

  6. Combine the noodles, cabbage, carrot, and tofu in a bowl. Pour sauce over and enjoy!
