Rhubarb Cake

Ingredients

  • 1 3/4 c. flour
  • 3 T. sugar
  • 1 t. baking powder
  • 1/2 c. + 2 Tbs butter or oil
  • 2 egg yolks, well beaten
  • 1/2 c. chopped walnuts
  • Filling:
  • 1/5 cups sugar
  • 4 Tbs flour
  • 2 egg yolks, beaten
  • 4 c. sliced rhubarb (about 8 stalks)
  • Meringue:
  • 4-5 egg whites
  • 1/4 tsp. cream of tartar
  • 8 or 10 Tbs sugar (2 for e/ egg white used)

Directions

  1. In mixing bowl, combine flour, sugar, baking powder, butter and egg yolks w/ beater.

  2. Mix well.

  3. Stir in nuts.

  4. Press on sides and bottom of well greased 13×9 pan.

  5. Pour filing into crust lined pan.

  6. Bake @ 350 for 40 mins.

  7. Put meringue on baked cake, then bake about 15 mins longer until light brown.

  9. IN bowl, thoroughly mix all ingredients.

  11. In large bowl (not plastic), combine egg whites and cream of tartar.

  12. Beat until peaks form.

  13. Add sugar and continue beating until still peaks form.
