Zucchini Crisp

Ingredients

  • 8 c. cubed, peeled zucchini
  • 3/4 c. lemon juice
  • 1/2 - 3/4 c. sugar
  • 2 t. cinnamon
  • 1 t. nutmeg
  • TOPPING:
  • 1 1/3 c. packed brown sugar
  • 1 c. old-fashioned oats
  • 1 c. flour
  • 2/3 cup butter

Directions

  1. In bowl, combine zucchini, lemon juice, sugar, cinnamon and nutmeg; mix well.

  2. Pour into a greased 9×13 dish.

  3. TOPPING:

  4. Combine brown sugar, oats and flour into a bowl; but in butter until crumbly.

  5. Sprinkle over the zucchini mixture.

  6. Bake at 375 for 45-50 mins or until bubbly and zucchini is tender.

  7. 12-15 servings
