Carrot Bars

Double recipe for 9×13 pan

Ingredients

  • Crust:
  • 1/2 c. butter
  • 1 c. flour
  • 1/2 c. sugar
  • FILLING:
  • 2 eggs, beaten
  • 1 c. sugar
  • 1/2 t. vanilla
  • 3 Tbsp flour
  • 1/4 t. baking powder
  • 1/2 t. salt
  • 1 c. nuts
  • 1 large carrot, grated

Directions

  1. CRUST:

  2. Grease pan a bit before putting in crust.

  3. Crumble together ingredients in pan and press firmly.

  4. Bake at 375 for 10-15 mins.

  5. Do NOT let crust brown.

  6. FILLING: Combine ingredients and stir in nuts and carrots.

  7. Place batter on crust.

  8. Bake @ 350 for 30-40 mins
