Ingredients
- 1.5 lbs fresh broccoli
- 1 can condensed fat free cream of mushroom
- 1/4 c. light mayo
- 1/4 c. shredded sharp cheddar cheese
- 1 Tbsp chopped pimiento
- 1.5 t. lemon juice
- 1/3 c. crushed Triscuits (8 crackers)
Directions

Cut up broccoli to make about 6 cups.

in saucepan, cook broccoli, uncovered, in a small amount of boiling, salted water for 10-15 mins; drain well.

Turn into a 1 1/2 qt. casserole dish.

Mix soup, mayo, cheese, pimiento and lemon juice.

Pour over broccoli.

Top with crushed crackers.

bake uncovered @ 350 for 35 mins.
