Ingredients
- 2 T butter
- 1 onion, chopped
- 1 stalk celery, chopped
- 3 c. chicken broth
- 8 c. broccoli florets
- 3 T. butter
- 3 T. flour
- 2 cups milk (I use skim)
- pepper and salt to taste
- 1/3 c. shredded cheddar cheese
- Shaved Asiago
Directions

Melt 2 T. butter in med stockpot, and saute onion and celery until tender.

Add broccoli and broth

cover and simmer for 10-20 mins

Mash broccoli

In small saucepan, over medium heat, melt 3 T butter

Stir in flour and add milk.

Stir constantly until thick and bubbly, and add to soup.

Season w/ salt and pepper.

Add 1/2 c. cheddar cheese
-
Shave Asiago cheese on top
