Stop Top Penne Pasta

Ingredients

  • 12 oz penne pasta
  • 12 oz fresh broccoli
  • 1 26oz jar marinara sauce
  • 1/2 c. ricotta
  • 4 oz diced mozzarella
  • Fresh parsley

Directions

  1. 12 oz penne pasta according to directions

  2. Add 1 pkg fresh broccoli florets the last 4 mins of cooking.

  3. Mix 1 jar (26oz) marinara sauce and

  4. 1/2 cup part-skim ricotta in a large pan.

  5. Cook over low/med heat until hot.

  6. Drain pasta and broccoli

  7. return to pot

  8. Add sauce mix to pasta and mix well.

  9. Immediately add 4 oz diced mozzarella cheese,

  10. 3 Tbs fresh parsley and 1/4 cup parmesan.

  11. Stir until cheese melts.

  12. Transfer to serving bowl and sprinkle with more parsley and cheese.
