Two Cheese Cauliflower “Faux-tatoes”

Ingredients

  • 1-1/2 lbs frozen cauliflower
  • 1 egg
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 8 oz shredded cheese (cheddar or colby jack)
  • 2 tbsp parsley
  • bacon, cooked and crumbled

Directions

  1. Cook cauliflower according to package directions until very tender

  2. In a large bowl, whisk egg; add cream cheese, sour cream, salt, and pepper and mix well

  3. Stir in shredded cheese

  4. Drain cauliflower and stir into cheese mixture; stir in part of the bacon

  5. Place in a greased 2-qt dish; top with parsley and remaining bacon

  6. Bake at 350 F for 30 min; serve immediately
