First Fish and Veggies

Ingredients
- 3/4 cup potato, peeled and chopped
- 1 cup carrots, peeled and sliced
- 125-g cod or sole fillet
- sprig of parsley
- 1/3 cup milk
- 1 tbsp butter
- 1 tomato, peeled, seeded and chopped
Directions

Put potatoes and carrots in a pan and cover with water.

Bring to a boil, reduce heat, cover, and cook for 20 minutes until veggies are soft.

Meanwhile, put fish in a pan with milk and parsley; poach for 5 minutes until fish flakes easily.

Strain the milk and reserve; flake fish, removing bones.

Melt the butter in a pan and saute tomato until mushy.

Drain the veggies and add the fish, tomato and 1/4 cup reserved milk.

Puree to desired consistency.
