Impossible Chicken Pot Pie

Ingredients

  • 1 broiler-fryer chicken, cut into parts
  • 2 cups water
  • 2 t. salt
  • 1 c. shredded mozz cheese
  • 1 can (6oz) tomato paste
  • 1 t. dried oregano
  • 1/2 t. dried basil
  • 1/2 c. cottage cheese
  • 2/3 c. prepared biscuit mix
  • 1 cup milk
  • 2 eggs
  • 1/4 t. pepper

Directions

  1. Place chicken in deep saucepan.

  2. Add water adn 1 t. salt.

  3. Cover and summer about 45 mins until fork can be inserted in chicken with ease.

  4. Cool – separate meat from bones.

  5. Discard bones and skin.

  6. Cut chicken in bite-size pieces and place in large bowl.

  7. Add 1/2 cup mozz cheese, tomato paste, seasonings and stir to mix. set aside.

  8. spread cottage cheese evenly over bottom of lightly greased large dish or pie pan.

  9. Place chicken mix evenly over cottage cheese.

  10. In bowl, combine biscuit mix, milk, eggs, pepper and remaining salt.

  11. Beat 1 min w. hand mixer,

  12. Pour over chicken mix

  13. Bake at 350 about 30 mins or until brown and knife comes out clean.

  14. Remove from oven and sprinkle with remaining 1/2 cup mozz.
