Ingredients
- 1 lb baby potatoes
- 5 T EVOO
- 1.5 c. chopped mushrooms
- 1 c. chopped red onion
- 1 T. fresh sage
- 1 T. fresh thyme
- 1 lb ground buffalo meat
- 1 egg
- 3/4 c. tomato sauce, divided
- 1/2 c. panko breadcrumbs
- 1/2 t salt
- 1/2 t. pepper
- 1/4 t. crushed red pepper
- 1 garlic clove, pressed
- 2 5oz bags fresh spinach
Directions

Heat oven to 375

Toss potatoes w/ 1 T. oil in medium bowl.

Place on 13×9 rimmed baking sheet or roasting pan.

Sprinkle w/ salt.

Roast 20 mins.

Meanwhile, heat 2 Tbsp oil in medium skillet over medium heat.

Add mushrooms and onions, saute until translucent, about 4 mins.

Remove from heat, mix in sage and thyme.

Cool slightly.

Mix meat, mushroom mix, egg, 1/2 cup tomato sauce, panko, salt and pepper in large bowl.

Push potatoes to sides of baking sheet; shape meat mix into 6×3 in loaf in center of sheet.

Roast 30 mins.

Combine 1/4 cup tomato sauce and red pepper in small bowl.

Pour over top of meatloaf

Roast 20 mins longer.

Remove from oven and let rest.

heat remaining 2 T. oil and garlic in large pot.

Add spinach and toss until wilted.

Season to taste.

Slice meatloaf; serve potatoes and spinach alongside.
