Buffalo Meatloaf with Spinach and Roasted Baby Potatoes

Ingredients

  • 1 lb baby potatoes
  • 5 T EVOO
  • 1.5 c. chopped mushrooms
  • 1 c. chopped red onion
  • 1 T. fresh sage
  • 1 T. fresh thyme
  • 1 lb ground buffalo meat
  • 1 egg
  • 3/4 c. tomato sauce, divided
  • 1/2 c. panko breadcrumbs
  • 1/2 t salt
  • 1/2 t. pepper
  • 1/4 t. crushed red pepper
  • 1 garlic clove, pressed
  • 2 5oz bags fresh spinach

Directions

  1. Heat oven to 375

  2. Toss potatoes w/ 1 T. oil in medium bowl.

  3. Place on 13×9 rimmed baking sheet or roasting pan.

  4. Sprinkle w/ salt.

  5. Roast 20 mins.

  6. Meanwhile, heat 2 Tbsp oil in medium skillet over medium heat.

  7. Add mushrooms and onions, saute until translucent, about 4 mins.

  8. Remove from heat, mix in sage and thyme.

  9. Cool slightly.

  10. Mix meat, mushroom mix, egg, 1/2 cup tomato sauce, panko, salt and pepper in large bowl.

  11. Push potatoes to sides of baking sheet; shape meat mix into 6×3 in loaf in center of sheet.

  12. Roast 30 mins.

  13. Combine 1/4 cup tomato sauce and red pepper in small bowl.

  14. Pour over top of meatloaf

  15. Roast 20 mins longer.

  16. Remove from oven and let rest.

  17. heat remaining 2 T. oil and garlic in large pot.

  18. Add spinach and toss until wilted.

  19. Season to taste.

  20. Slice meatloaf; serve potatoes and spinach alongside.

  21. Serves 4-6
