Ingredients
- Cooking spray
- 4 (4 oz) beef tenderloin steaks, trimmed
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 cup presliced mushrooms
- 1/2 cup finely chopped onion
- 1 tsp bottled minced garlic
- 1/2 cup low-salt beef broth
- 1/3 cup fat-free sour cream
- 2 tbsp minced fresh parsley

Heat a large nonstick skillet coated with cooking spray over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to pan; cook 3 minutes on each side. Remove from pan.

Add mushrooms, onion and garlic to pan; sauté 5 minutes. Stir in broth; bring to a boil. Cover, reduce heat and simmer 3 minutes.

Place sour cream in a medium bowl. Gradually add mushroom mixture to sour cream, stirring constantly with a whisk. Stir in parsley. Serve gravy with steak.
