Hot Chicken Salad

Ingredients

  • 4 c. cold chicken chunks
  • 2 T. lemon juice
  • 3/4 c. mayo
  • 1 t. salt
  • 1 sm jar pimento, cut up lengthwise
  • 2 c. chopped celery (parboil)
  • 5 HB eggs, slices
  • 1 can cream of chicken soup
  • 1 t. dry onion
  • 1 c. sliced water chestnuts
  • 1 can French Onions
  • 4 oz cheddar cheese

Directions

  1. mix all togteher.

  2. Put in a 9×13

  3. Let stand overnight

  4. Next day, but over top- 1 can french onions.

  5. Grade 4 oz mild cheddar over top.

  6. Bake at 400 for 30 mins.
