Ingredients
- 1 lrg carrot
- 1 sm turnip
- 1 artichoke
- 1 lrg beet
- 1 head lettuce
- Juice of 1/2 sm lemon
- 2 t. Dijon mustard
- 1 t. lime juice
- 2 t. minced garlic
- 1 T. apple cider vinegar
- 1/2 t. pepper
- 2 t. herbed salt
- 2 t. canola oil
- 2 T. EVOO
Directions

Grate carrot, turnip, artichoke and beet, keeping them separate. Wash lettuce and arrange on salad plates.

Spoon grated veggies on top.

Sprinkle w/ lemon juice

For vinaigrette, mix together the rest of the ingredients.

Drizzle over top.
