Grated Vegetable Salad with Mustard Vinaigrette

Ingredients

  • 1 lrg carrot
  • 1 sm turnip
  • 1 artichoke
  • 1 lrg beet
  • 1 head lettuce
  • Juice of 1/2 sm lemon
  • 2 t. Dijon mustard
  • 1 t. lime juice
  • 2 t. minced garlic
  • 1 T. apple cider vinegar
  • 1/2 t. pepper
  • 2 t. herbed salt
  • 2 t. canola oil
  • 2 T. EVOO

Directions

  1. Grate carrot, turnip, artichoke and beet, keeping them separate. Wash lettuce and arrange on salad plates.

  2. Spoon grated veggies on top.

  3. Sprinkle w/ lemon juice

  4. For vinaigrette, mix together the rest of the ingredients.

  5. Drizzle over top.
