Ingredients
- 2 bags spinach
- 1/2 cup or less fresh goat cheese
- 1/3 lb thick sliced pancetta cut into 1 inch strips
- EVOO
- 1 T. minced garlic
- 2 t. minced fresh thyme leaves
- 1/4 c. sherry vinegar
- S&P
- 1/2 cup dried cranberries
Directions

Crumble cheese over spinach.

Cook pancetta in a medium skilled over medium heat until crispy; 8-10 mins.

Drain and drippings; whisk in EVOO, garlic, thyme, vinegar and season.

Don’t need to use all dressing!
