Ingredients
- 2 c. frozen corn, thawed
- 3 c. cooked, or 2(15.5oz) cans black beans, rinsed and drained
- 1/2 chopped red bell pepper
- 1 (4oz) can chopped mild green chiles, drained
- Cut up mango pieces
- DRESSING:
- 2 garlic cloves, crushed
- 1/4 cup chopped fresh cilantro
- 1 t. cumin
- 1/2 t salt
- 2 T lime juice
- 2 T. water
- 1/4 cup EVOO
Directions

In a blender or food processor, mince garlic. Add cilantro, cumin, salt, pepper and blend.

Add lime juice, water and oil and blend.

Pour dressing over salad and toss to combine.
