Italian Style Pasta Salad

Ingredients

  • 4oz corkscrew pasta
  • 1 6oz jar marinated artichoke hearts
  • 1 sm sliced zucchini
  • 2oz sliced salami
  • 1 c. shredded mozz
  • 2 T. grated Parm
  • 2 T. salad oil
  • 2 T. white wine vinegar
  • 3/4 t. dry mustard
  • 1/2 t. dried oregano
  • 1/2 t. dried basil
  • 1 clove crushed garlic
  • Broccoli
  • Tomatoes
  • Green peppers

Directions

  1. Drain artichokes, reserving marinade.

  2. Coarsely chop chokes.

  3. Halve zucchini slices.

  4. Combine cooked pasta, artichokes, zucchini, salami, cheese and veggies.

  5. Combine reserved artichoke marinade, salad oil, vinegar, mustard, herbs and garlic. Shake well.

  6. Pour over pasta mixture and toss.

  7. Transfer to covered contained and chill several hours
