Cuban Pork Tenderloin

Ingredients

  • 1/4 c. fresh OJ
  • 2 T. chopped cilantro
  • 1 t. cumin
  • 1 t. dried oregano
  • 2 cloves garlic, minced
  • 1/2 t. coarse salt
  • 1/2 t. crushed red pepper
  • 2 pork tenderloins (1 to 1 1/4 lbs)

Directions

  1. In small bowl, mix together juice, cilantro, cumin, oregano, garlic, S&P. Pour into a resealable plastic bag; add pork.

  2. refrigerate 30 mins to 4 hours.

  3. Remove pork, but do not scrape off solids; discard marinade

  4. ill pork 20 to 27 mins, until internal temp is 145.

  5. Transfer to carving board and let stand 3-5 min.
