Ingredients
- 1 T. canola oil
- 1 c. broccoli
- 1/2 cup shredded carrots
- 1/2 c. chopped onion
- 4 eggs
- 1/4 c. 1% milk
- 1 T. chopped parsley
- 1/4 t. salt
- 1/4 t. hot sauce
- 1 c. shredded cheese (cheddar)
- 1 T. grated Parm
Directions

In skillet, heat oil, add broccoli, carrot and onion, cook 5 mins until tender

In bowl, whisk eggs, milk, parsley, salt and hot sauce.

Pour egg mix over veggie mix

Sprinkle with cheese, reduce heat to low

cover and cook 10 mins until eggs are set and light brown on bottom.

Cut into wedges
