Ingredients
- CRUST:
- 2 cups flour
- 1/3 c. sugar
- 1/4 t. salt
- 2/3 c. unsalted butter, cold
- FILLING:
- 3 eggs
- 1 c. light corn syrup
- 1/2 sugar
- 1/2 brown sugar
- 2 T. butter, melted
- 1 t. vanilla
- 1 2/3 cups chopped pecans

Line 9×13 with heavy foil and spray

Combine flour, 1/3 c. sugar and salt. Cut in 2/3 cup butter until mix resembles coarse crumbs. Can use pastry blender or 2 knives.

Sprinkle mixture evenly over prepared pan and press in firmly.

Bake 20 mins.

While crust is baking, prepare filling

In large bowl, mix together eggs, corn syrup, 1/2 c. sugar, 1/2 c. brown sugar, 2 T. butter and vanilla until smooth.

Stir in the chopped nuts.

Spread filling evenly over crust as soon as it comes out of the oven.

Bake for 25-30 mins until set.

If top starts to brown, cover with foil .
