Orecchiette with Broccoli Raab

Ingredients

  • 4-6 c. broccoli raab stalks, cut into 2 inch lengths
  • 1 lb orecchiette pasta
  • 1/2 c. EVOO
  • 6 cloves garlic, thin sliced
  • 1/2 t. crushed red pepper flakes
  • Grated cheese

Directions

  1. In large pot, blanch broccoli raab in salted water until tender. Drain and keep warm.

  2. Meanwhile, in another pot, cook pasta and drain.

  3. In a clean large pot, saute garlic lightly in EVOO.

  4. Add red pepper flakes and raab and saute 1 min. Add S&P to taste and add the pasta. Simmer 2 mins.
