Saratoga Summer Vegetable Salad

Ingredients

  • 1 med zucchini
  • 1 med yellow squash
  • 1 bell pepper (red, yellow etc) seeded finely diced
  • 3 celery stalks , fine diced (or parboiled asparagus)
  • 1 large tomato, diced
  • 1 med avocado, diced
  • 10 fresh basil leaves, thin sliced
  • 1/4 c. chopped parsley
  • 1/2 champagne vinaigrette
  • 3/4 t. sea salt
  • pepper
  • 3/4 crumbled Feta or goat cheese

Directions

  1. Use peel and flesh of zucchini and squash, cutting out and discarding core. Dice

  2. In medium bowl, gently toss zucchini, squash, bell pepper, celery, tomato, avocado, basil and parsely.

  3. Drizzle in the dressing and S&P to taste. Add cheese
