Lemon Crinkle Cookies

Ingredients

  • 1/2 c. butter, soft
  • 1 c. sugar
  • 1/2 t. vanilla
  • 1 egg
  • 1 t. lemon zest
  • 1 T. fresh lemon juice
  • 1/4 t. salt
  • 1/4 t. baking powder
  • 1/8 t. baking soda
  • 1.5 c. flour
  • 1/2 c. powdered sugar

Directions

  1. Oven 350

  2. Grease light colored baking sheets w/ non-stick spray

  3. In lrg bowl, cream butter and sugar until light and fully.

  4. Whip in vanilla, egg, lemon zest/juice.

  5. Scrape sides and mix again.

  6. Stir in all dry ingredients slowly until just comibned, excluding the powdered sugar.

  7. Scrape sides of bowl and mix again briefly.

  8. Pour powdered sugar onto a large plate.

  9. Roll a heaping teaspoon of dough into a ball and roll in sugar. Place on baking sheet.

  10. Bake 9-11 mins or until bottoms being to barely brown and cookies look matte (not melty or shiny)

  11. If using a non-stick darker cookie sheet, reduce time by 2 mins.
