Ingredients
- 16 oz bowtie pasta
- 1/2 c. EVOO
- 3 T red wine vinegar
- 3-4 minced garlic cloves
- S&P
- 1/2 cup drained and chopped sun dried tomatoes
- 1/2 c. pitted sliced Kalamata Olives
- 1/4 c. chopped red onion
- 3 cups baby spinach (torn in half)
- 12 oz crumbled Feta
- 3/4 t. greek seasoning
Directions

Cook pasta al dente and drain

Combine EVOO, vinegar, garlic, pepper and greek seasoning in jar with lid, seal tightly – shake to mix and pour over cooled pasta.

Toss pasta, tomatoes, olives, onion and oil mix in a salad bowl and chill.

Add spinach and cheese to pasta 15 min before serving.
