Rib-Eye Steaks with Radicchio, Pear and Blue Cheese Salad

Ingredients

  • 2 servings
  • 3 T. EVOO
  • 1 T. sherry wine vinegar
  • 1 T. minced shallot
  • 1.5 t. honey
  • 2 8-9oz rid-eye steaks
  • 2 c. finely sliced radicchio
  • 1 c. packed mixed baby greens
  • 1 small ripe pear, thin sliced
  • 1/3 c. crumbled blue cheese

Directions

  1. Whisk 2 T EVOO, sherry, shallot and honey in large bowl. Season to taste.

  2. Season steaks and grill or sear in pan.

  3. Add last 4 ingredients to dressing; toss.

  4. Serve alongside steaks.
