Ingredients
- 1/4 c. flour
- 2 t. salt
- 1/4 t. pepper
- 1 chicken, cup up, approx 3 lb
- 3 T. butter
- 2 med onions, chopped
- 1 clove garlic, minced
- 1 can Southwestern JalapeƱo black beans with lime juice
- 1 can (8oz) tomato juice
- 3/4 t. chipotle rub
- 1/4 t. hot sauce
- 1 bay leaf
Directions

In plastic bag, combine flour, salt and pepper.

Dredge chicken with mixture in dutch oven over med heat, melt butter and cook chicken until light brown; 15-20 mins.

Remove chicken to plate and keep warm.

In same pot, cook and stir inions and garlic until tender; 5 mins.

Add beans with liquid, tomato sauce, chipotle rub, hot sauce and bay leaf.

Arrange chicken over top.

Cover and cook over medium heat until chicken is tender; 45 mins.

Can serve with Lime Rice
