Ingredients
- 1 c. brown rice
- 2 whole chicken breasts
- 1 med onion, finely chopped
- 1 pkg frozen broccoli, thawed (or 1 bunch fresh), chopped
- 1 can cream of celery, mushroom or chicken soup
- 2 oz grated cheddar cheese
Directions

Cook rice according to package directions.

Meanwhile, in covered saucepan, simmer chicken breasts in small amount of water until just tender, about 20 mins.

Remove from pan, reserving liquid. Cool chicken until it can be handled, then ski, debone and cut into bite-size pieces.

In large mixing bowl. mix onion, broccoli, soup, rice and reserved chicken liquid.

Transfer to 8inch square baking dish.

Place chicken on top of rice mixture, pressing them in slightly.

Top with grated cheese.

Cover and bake at 350 for 30 mins until bubbly.
