Ingredients
- 6 eggs
- 1/4 c. milk
- 1/4 t. salt
- 1/4 t. pepper
- 2 T butter
- 1/4 c. red bell pepper, chopped
- 1/4 c. green onions, sliced
- 1 lb smoked sausage, cut into 1/2 inch pieces
- 1/5 cups shredded cheddar
- 1 pkg (1 lb 4oz) refrigerated hashbrowns
Directions

Heat oven to 350

Grease baking dish.

Combine eggs, milk S&P.

Microwave bell pepper, onion and butter 1 min.

Fold veggies, 1/2 of sausage, 1 cup cheese and hashbrowns into egg mixture.

Pour egg mixture in baking dish.

Press remaining sausage slices vertically, around edge of baking dish.

Sprinkle with remaining cheese.

Bake 30-35 mins until eggs are set.
