Canned Peaches

Ingredients

  • less than 1 cup sugar into 1 qt water.

Directions

  1. Prepare jars and get water in canner heating

  2. Prepare syrup by heating water and sugar until sugar is dissolved in pot.

  3. Peel peaches:

  4. dip peaches in boiling water for 30-60 seconds; do 5 at a time.

  5. Immediately remove – immerse in ice water

  6. Slice peaches in half and throw out pit.

  7. Notice seam down one side of peach. Slice around diameter of peach following line and pluck pit right now.

  8. Slip off skins

  9. Pack peach halves – cavity side down and quickly cover with syrup, leaving 1/2 inch head space, and place in hot water canner to keep warm.

  10. Wipe rims clean with cloth, remove air bubbles and place the lids.

  11. Process for 25 mins – start timing when water begins to boil – water should be above jars 2 inches in canner.
