Chunky Two-Bean and Beef Chili

Ingredients

  • 1 T. oil
  • 1.5 lbs beef stew meat
  • 3/5 t. salt
  • 1/5 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 T. minced garlic
  • 2 T. chopped jalapeno
  • 2/3 c. dry red wine
  • 1.5 T brown sugar
  • 2 T. tomato paste
  • 1/ t. ancho chili powder
  • 1 t. dried oregano
  • 1 t. ground red pepper
  • 1/2 t. chili powder
  • 1/4 t. cumin
  • 1/4 t. coriander
  • 1/8 t. cinnamin
  • 1 (28oz) can whole tomatoes; undranied and chopped
  • 1 (15oz) can dark red kidney beans, rinsed and drained
  • 1 (15oz) can hot chili beans

Directions

  1. Season beef and add half to dutch oven, saute 8 mins until browned. Remove and repeat with other half.

  2. Add oil, onion, and bell pepper to pan and saute 3 mins.

  3. Add garlic and jalapeno, saute 1 min.

  4. Add wine, scraping pan.

  5. Return beef to pan.

  6. Stir in sugar and remaning ingredients.

  7. Bring to a boil.

  8. ver, reduce heat and simmer 1.5 hours, until beef is tender
