Ingredients
- 4 thick cut bacon slices, chopped
- 1 c. sliced shallots
- 3 T. EVOO
- 6 garlic cloves, chopped
- 1 14.5 oz can petite diced tomatoes in juice
- 1 8oz bottle clam juice
- 1/3 c. dry white wine
- 1/2 (scant) t. saffron threads
- 2 15oz cans small white beans, drained
- 1.5 lbs halibut fillets, cut into 1.5 inch chunks
Directions

Saute bacon and shallots in large pot over med-high heat until bacon is crisp. Add EVOO and garlic, stir 1 min.

Add tomatoes with juice, clam juice, wine and saffron; bring to a boil.

Reduce heat, simmer 5 mins.

Add beans and fish; bring to simmer.

Cover; simmer until fish is just opaque in center; about 5 mins.

Season to taste
