Smoky Marinade for Pork

Nice for BBQ Pork Belly or Pork Spare Ribs
Prep time: 10 minutes
Cook time: 150 minutes

Ingredients
- 2 cloves garlic, crushed
- 1T smoked paprika
- 2T brown sugar
- 2T golden syrup
- 1T white wine vinegar
- 1T oil
- 2T bbq sauce
Directions

Mix all ingredients together.

Place meat, skin side up, in marinade and leave 2 hours minimum, or overnight.

Cook pork, skin side up, with skin rubbed in oil and sprinkled with salt.

Place meat on rack to cook, so juices drip into pan .

Cooking time:

30 minutes at 220oC, then lower heat to 180oC for further 2 hours.
