Peach & Oat Cookies

Relatively low fat cookie
Prep time: 15 minutes
Cook time: 10 minutes

Ingredients
- 60g butter or low fat spread
- 3/4 C brown sugar
- 1 t vanilla essence
- 1 egg, beaten
- 1C rolled oats
- 3/4 C self raising flour
- 3/4 C dried peaches/apricots, chopped
Directions

Cream butter and sugar.

Add egg and vanilla essence.

Fold in remaining ingredients.

Place tablespoon lots on tray, 6 cm apart.

Bake at 190oC approx 10 minutes.

Cool on tray until firm.
