Chocolate Sponge Roll

It’s success is determined by the well beaten egg/sugar mixture!

Prep time: 15 minutes
Cook time: 12 minutes
Serves 10 people

Ingredients

  • 3 eggs
  • 1 C caster sugar
  • 2 T cocoa
  • 2 T boiling water
  • 1/2 C flour
  • 1 t baking powder

Directions

  1. Beat eggs and sugar until pale and thick – can take 5 – 10 minutes, till mixture holds shape when beaters are held out of mixture.

  2. Combine cocoa and water to form a smooth paste.

  3. Whisk into egg mixture to just combine.

  4. Fold in sifted flour and baking powder.

  5. Spread into paper-lined sponge roll tin.

  6. Bake at 190oC approx 10-12 minutes, until puffed and set.

  7. Turn onto tea towel, dusted with icing sugar.

  8. When cold, unroll and fill with jam and whipped cream.

  9. Ice with thin chocolate icing if desired.
