Chocolate Sponge Roll

It’s success is determined by the well beaten egg/sugar mixture!
Prep time: 15 minutes
Cook time: 12 minutes
Serves 10 people

Ingredients
- 3 eggs
- 1 C caster sugar
- 2 T cocoa
- 2 T boiling water
- 1/2 C flour
- 1 t baking powder
Directions

Beat eggs and sugar until pale and thick – can take 5 – 10 minutes, till mixture holds shape when beaters are held out of mixture.

Combine cocoa and water to form a smooth paste.

Whisk into egg mixture to just combine.

Fold in sifted flour and baking powder.

Spread into paper-lined sponge roll tin.

Bake at 190oC approx 10-12 minutes, until puffed and set.

Turn onto tea towel, dusted with icing sugar.

When cold, unroll and fill with jam and whipped cream.

Ice with thin chocolate icing if desired.
