Carrot Cake

Most yummy, moist and delicious!

Prep time: 15 minutes
Cook time: 45 minutes
Serves 12 people

Ingredients

  • 2 C flour
  • 2 t baking soda
  • 1 t each mixed spice and cinnamon
  • 1/2 t salt
  • 3/4 C white sugar
  • 3/4 C brown sugar
  • 4 eggs
  • 1 C vegetable oil
  • 250 g carrot, grated
  • 120 g walnut pieces (optional)
  • 135 g drained, crushed pineapple
  • Cream cheese icing:
  • 100 g cream cheese
  • 90 g softened butter
  • 1 1/2 C icing sugar, sifted
  • 1T finely grated lemon rind

Directions

  1. Sift first 5 ingredients into large bowl.

  2. Add brown sugar, eggs and oil and beat until well combined.

  3. Add remaining ingredients and beat further minute.

  4. Bake in 20-23cm lined cake pan, at 180oC approx 45 minutes, until firm to touch.

  5. Ice when cold with cream cheese icing.
