Carrot Cake

Most yummy, moist and delicious!
Prep time: 15 minutes
Cook time: 45 minutes
Serves 12 people

Ingredients
- 2 C flour
- 2 t baking soda
- 1 t each mixed spice and cinnamon
- 1/2 t salt
- 3/4 C white sugar
- 3/4 C brown sugar
- 4 eggs
- 1 C vegetable oil
- 250 g carrot, grated
- 120 g walnut pieces (optional)
- 135 g drained, crushed pineapple
- Cream cheese icing:
- 100 g cream cheese
- 90 g softened butter
- 1 1/2 C icing sugar, sifted
- 1T finely grated lemon rind
Directions

Sift first 5 ingredients into large bowl.

Add brown sugar, eggs and oil and beat until well combined.

Add remaining ingredients and beat further minute.

Bake in 20-23cm lined cake pan, at 180oC approx 45 minutes, until firm to touch.

Ice when cold with cream cheese icing.
