White Christmas Blondies

Serves 20 people

Ingredients

  • 125 g butter, softened
  • 3/4 C caster sugar
  • 1/2 t vanilla essence
  • 2 eggs
  • 1 T brandy or sherry
  • 1 1/3 C plain flour
  • 1/4 t baking powder
  • 1/4 C dessicated coconut
  • 90 g white chocolate, melted
  • 4 T slivered almonds, toasted
  • 1/4 C cherries, chopped
  • 1/4 C cranberries, chopped
  • 1/4 C white chocolate, chopped (optional)

Directions

  1. Cream butter and sugar until fluffy.

  2. Add eggs, singly.

  3. Add vanilla and melted chocolate.

  4. Mix in flour, sifted with baking powder.

  5. Then add remaining ingredients.

  6. Bake in paper lined slice tin at 180oC, approx 20 minutes, until firm to touch.

  7. Cool, dust with icing sugar to serve.
